I just found this awesome website that I'm sure I'll be using regularly. It has a huge list of substitutions for all sorts of ingredients. For example, I want to make homemade ice cream, but the recipe I'm looking at calls for whole milk... which I don't have. Well, I just scroll down this lovely chart to find that I can use evaporated milk diluted with water. Hooray! Check it out:
