German Chocolate Cheesecake Bars

Source: 101 Things To Do With A Cake Mix by Stephanie Ashcraft

We made these bars for a Family Home Evening on service and took them to a widow neighbor of ours. Of course, we did save a few for ourselves as well. They were {yummy!!!} as well as easy to make. This dessert definitely made our "to make again" list. And they have oatmeal in them to boot-so that makes them "healthy" in my book (wink, wink...). Here's the recipe:

Bottom Layer:
1 German chocolate cake mix
1 c. quick oatmeal
1 stick butter, softened
1 egg

Top Layer:
8 oz cream cheese
2 eggs
1 can (16 oz) coconut-pecan frosting

Preheat oven to 350 degrees. Mix together ingredients under "bottom layer" until crumbly. Set aside two cups of mixture and press the rest into a greased 9x13 pan.

Then mix together ingredients under "top layer" (I used the same bowl, although it says to use a separate bowl...less dishes, right?) until smooth. Spread over bottom layer. Sprinkle the reserved cake/oatmeal mixture over the top.

Bake 40-45 minutes, or until done.
